Continuing our Gin Essentials series, let’s next explore what is Old Tom Gin (and the History Behind the Name).
What Is Old Tom Gin?
Old Tom gin is a lightly sweetened style of gin, sitting between the bold dryness of London Dry and the richness of genever.
It’s historically significant — and recently revived by craft distillers.
Why Is It Called “Old Tom”?
In 18th-century England, gin was heavily taxed and often sold illegally.
Pubs would hang wooden plaques shaped like black cats (“Old Tom”) outside.
Customers dropped a coin into a slot and received gin from a hidden pipe.
The name stuck — and became synonymous with a slightly sweeter, smoother gin.
How Old Tom Gin Is Made?
- Juniper-led base
- Often includes liquorice, citrus peel, and warm spices
- Light sweetness (from sugar or botanicals)
Unlike London Dry, sweetness is allowed.

To celebrate Montréal’s 375th anniversary, GIN375 is an hommage to the vibrant city.
Putting a fresh spin on the Old Tom style of gin, GIN375 is made from botanicals sourced from all over Québec.
Fresh cranberry and sour cherry from the Eastern Townships and wild rose petals from the Gaspe region give it its lovely amber colour. Organic spring honey from the Laurentians delicately sweeten it and wild mint, larch and spruce create a spicy, warm finish.
A beautiful sipping gin that is one of a kind.
