How Are Our Gins Made?

Inspired by nature, our gin uses hand-picked botanicals from the boréal forest in the north of Québec. Another, using seaweed harvested from the St Lawrence River.


Exploding with flavour, fresh as the ingredients used to make them, enjoy these gins neat, with a premium tonic or in your favourite cocktail!

Gin Km12 with Medal

KM12 GIN

INSPIRED BY THE WEALTH OF THE BORÉAL FOREST

Km12 is a London dry gin, where botanicals are distilled with neutral grain spirit (corn) and no other flavours are added after distillation.


Botanicals are hand picked in the boréal forest where the distillery is located. Organic juniper berries add depth and complexity with their woody, citrus and spicy characteristics.


Smooth, fresh and elegant, this gin does a little dance on the palate with flavours of sweet pine and gentle citrus and floral notes. Exquisite!

ST. LAURENT ACERUM

ACERUM – CANADA’S SPIRIT

St. Laurent Acerum is noble eau-de-vie that reveals the delicate and refined aromas of distilled maple sap. The sole ingredients used for fermentation are Quebec maple syrup, water and yeasts. It is then aged in both new and used oak barrels for more than a year.

More than 25 liters of maple sap are needed to produce a single bottle! One of the most laborious spirits to produce, Acerum is an innovation that pays tribute to our ancestral tradition of the sugar shack.

ST. LAURENT GIN

INSPIRED BY THE SEA

Distilled in small batches, St. Laurent Gin is an all-natural, hand-crafted gin.


After a steam infusion of exotic spices in a custom-designed gin-basket, laminaria seaweed is macerated in the resulting distillate to extract umami flavours, which form the base notes of this gin.


Pair with a mediterranean-style tonic and any kind of seafood. Try it sprinkled on oysters with a squeeze of lemon!

ST. LAURENT GIN VIEUX

INSPIRED BY THE SEA

Each month, a tiny portion of St. Laurent Gin is transferred to ex-bourbon casks and aged for more than a year.


The fresh citrus flavours now take on candied orange and lemon notes. Cinnamon aromas from the cassia bark are enhanced and integrate with spicy, vanilla notes from the oak casks.


St. Laurent Gin Vieux is a stunning sipping gin that even whisky drinkers love! Enjoy neat, on the rocks or with a splash of premium tonic and a slice of lemon.

SMALL BATCH RELEASE

Rye whisky made of 93% local Quebec rye and 7% German chocolate malted rye, finished in 30 year old sherry Oloroso casks imported from Spain. No colour added and non-chill filtered.

CIRKA GIN SAUVAGE

INSPIRED BY CANADA'S MAJESTIC WILDERNESS

"Sauvage" means wild in French and this gin is just that! It combines the unique aromatics of Québec’s boréal forest with 30 plus roots, shoots, fruits and flowers to create a beguiling, expressive gin.


For the gin's spirit base, Cirka uses their own Vodka Terroir, which they distil in a custom pot still. Using a combination of maceration and botanical baskets, the result is a unique, balanced and complex gin that can be enjoyed neat or mixed in cocktails.

Cirka's Vodka Terroir starts with premium non-GMO corn grown in Québec. Using water filtered in-house with maple leaves, a single distillation in a 24-foot vodka column helps to retain natural flavours while achieving that rich texture that premium vodka is known for.

CIRKA GIN375

INSPIRED BY CANADA'S MAJESTIC WILDERNESS

To celebrate Montréal’s 375th anniversary, GIN375 is an homage to the vibrant city.


Putting a fresh spin on the Old Tom style of gin, GIN375 is made from botanicals sourced from all over Québec.


Fresh cranberry and sour cherry from the Eastern Townships and wild rose petals from the Gaspe region give it its lovely amber colour. Organic spring honey from the Laurentians delicately sweeten it and wild mint, larch and spruce create a spicy, warm finish.


A beautiful sipping gin that is one of a kind.
